Neapolitan Genovese

Ingredients:

  • 300g of veal topside

  • carrots

  • celery

  • onion

  • extra virgin olive oil

  • white wine

  • parsley

  • laurel

Preparation:


Let's take a large pan and put the oil in it, in the meantime let's take our piece of meat and cut it into pieces.


Meanwhile, we put our chopped vegetables in the oil with the parsley and bay leaves and let them cook gently.


Once the pieces of meat are prepared, put them in the oil together with the chopped vegetables


blend with the white wine and leave to cook on a low heat with the lid on for 3 hours, stirring occasionally.





just before the end of cooking we check our meat which must be all filleted, we raise the flame and blend with more wine until the end of cooking


let the liquid reduce and prepare the pasta, once cooked drain it 3 minutes before the end of cooking in the pan with the meat and mix with grated parmesan cheese.

Serve hot and enjoy your meal
